Healthy(ish) Christmas Recipes!

Eggless Banana Bread 

  1. Preheat oven to 180 degrees Celsius. 
  1. Mash 4 very ripe bananas in a mixing bowl with ½ a cup of melted butter. 
  1. Add ½ a cup of milk, 1 teaspoon of vanilla essence and mix it together. 
  1. Add ¾ cup of brown sugar, 1 teaspoon of baking soda and 1 pinch of salt and mix. 
  1. Add 1 and a ½ cups of all-purpose flour and mix until just combined.  
  1. Pour into a greased and floured bread loaf pan.  
  1. Bake for 45-60minutes (or until a wooden pick comes out clean). 
  1. Allow it to cool before removing from the pan.  
  1. Try not to devour the whole thing in one sitting!  

No bake Oreo Cheesecake Dessert Shooters 

  1. Place 20 Oreos in a food processor and crush until there are medium sized crumbs 
  1. Place a spoonful of Oreo into each dessert shooter 
  1. Beat together 455g cream cheese and 1 & ¼ powdered sugar until well combined. 
  1. Stir in 3 tablespoons sour cream and 1 teaspoon of vanilla extract. 
  1. In a separate bowl, use an electric mixer to beat 2 cups of heavy cream into stiff peaks. 
  1. Slowly fold in the cream cheese mixture until well-combined.  
  1. Add the remainder Oreo crumbs and mix gently.  
  1. Pour into piping bag or zip-lock bag with small hold and pipe into cups.  
  1. Place mini-Oreo and a cube of vanilla chocolate on top.  
  1.  Freeze for 3-4 hours before eating.
